Green Beans and Artichokes with Italian Herbs
Steam 1 lb. of fresh green beans until just cooked and place in a medium-sized bowl (I just drained mine, tossed them once or twice, then put them back in the same pan for mixing with other ingredients). Add a 14 oz. Can of quartered artichoke hearts, including juice. Mix in one cup fresh bread crumbs (not dried), ½ cup good-quality olive oil, ½ cup grated Parmesan cheese, and Italian herb seasoning, garlic salt, salt and pepper to taste. Stir together and bake in an uncovered casserole dish for 25 minutes at 350F until bubbly and very lightly browned.
