Our friend Bunny has a way of entertaining that appears effortless - this is a recipe that I requested from her several years ago - it is easy and versatile.

WHITE CHOCOLATE BERRY PIE

5 (1-ounce) squares white baking chocolate, divided use

2 Tb. milk

1 (3-ounce) pkg cream cheese, softened

1/3 C. powdered sugar

1 tsp. grated orange peel

1 C. whipping cream, whipped (I used Cool Whip, about 2 cups)

1 9-in. graham cracker crust

2 cups sliced fresh strawberries

 

In microwave or double boiler, melt four squares of chocolate with milk.

Cool to room temp. Meanwhile, beat cream cheese and sugar until smoooth.

Bet in orange peel and melted white chocolate. Fold in whipped cream.

Spread into crust. Arrange slices strawberries on top. (I sweetened them a

little first as they weren't very sweet by themselves) Melt the remaining

square of chocolate (be careful it doesn't burn in microwave!) and drizzle

over berries. Refrigerate for at least 1 hour. Store in refrigerator.
