Cilantro usually grows all over our back yard during the winter thanks to "volunteer" seeds. If you like the taste of cilantro as much as we do, you will like this soup. Our friend Chris in Houston would say it tastes like "soap" instead of soup, since that's what she thinks cilantro tastes like. This can also be served chilled like vichyssoise.

CILANTRO SOUP

 

1 large yellow onion

4 cloves garlic

1 bunch green onions

5 tablespoons butter

1 large russet potato

2 cans chicken broth

5 cups loosely packed cilantro without stems

1/2 cup heavy cream or milk

 

Chop both kinds of onions onion and mince garlic. Saute in butter. Add chopped potato and chicken broth. Cook over low heat partially covered until potato is tender.Remove from heat and add cilantro and cream/milk. Puree in batches and warm (or chill overnight).
