The Best Enchiladas in the World
On a recent Sunday evening, we were invited by our friends the Fernandez family to try some homemade enchiladas. Mary Fernandez, the amazing 80-year-old mother of the clan, starred as head chef. Her enchiladas are legendary. She makes her own red chile sauce from scratch using dried New Mexico-style chiles. Her preferred brand is Chiles Don Chanano, "From Zacatecas the the World." She starts her sauce the day before, soaking the chiles and pureeing them in a blender with other spices. Her daughters, Diana and Josie, believe that the cheese should be hand-grated to have the right texture. The rice and beans are also started the day before. Whatever magic happens in the Fernandez kitchen is evident in the taste - these truly were the best enchiladas we have ever eaten! Lucky us, we might even be invited back.
