Jan Haney, a colleague, brought this to one of our
scholarship meetings. It is my favorite kind of recipe - easy and
really delicious. You can keep most the ingredients in the pantry to
put together on short notice.
Jan's Pumpkin Dessert
Beat four eggs, add 1 16 ounce can of
pumpkin, 2 teaspoons pumpkin pie spice, 1 teaspoon salt, 1 can
evaporated milk, and 1 3/4 cups sugar. Pour into 9x13" baking dish.
Top with 1 box butter-flavored cake mix (unprepared) and 1 cup pecan
pieces. Melt 1/2 cup margarine and pour over. Bake for 1 hour and 10
minutes at 350F. Cut into squares. Top with whipped cream. Serves
12-16.
