Pat is my friend and colleague in the Computer Science Department at Trinity University. This cake is wonderful, and blessedly easy to prepare - highly recommended.
Julie's Lemon Cake
Julie Semmes was my mother-in-law. This is Tom's favorite cake. She always made it for him on his birthday.

Mix 1 pkg lemon Duncan Hines cake mix 2 tablespoons flour 4 tablespoons sugar
Grease Bundt pan or 10 inch tube pan
Heat oven to 350 degrees
Beat 4 eggs
Add 1 cup water 2 teaspoons lemon extract 2 teaspoons grated lemon rind 1 package instant lemon pudding
Beat thoroughly; then add 3/4 cup Wesson oil
Beat again and then add the dry ingredients and beat until thick.
Bake on bottom shelf in oven at 350 for 30 min.
Reduce heat to 325 and bake 30 more min.
Remove from oven and cool in pan.

Icing
Grate Rind of 4 lemons Mix with Juice of 4 lemons 1/2 box powdered sugar Beat
Spoon icing on slowly while it soaks in.
Cake can be frozen and sliced used as needed. |
