CALABAZITA ALA DORIS

This is a recipe I've had for years - it's from a teacher friend, Doris Kays- it's one of those simple recipes that is just plain good. You can use pretty much any kind of summer squash in this.

 

1 clove garlic

3 large scallions or green onions

6 slices cooked and crumbled bacon

1 pound ground beef

1 pound fresh zucchini, sliced

8 ounce carton fresh mushrooms

1 can stewed tomatoes

1 can Rotel tomatoes

Cook bacon & crumble--in bacon grease, sauté scallions, garlic, and mushrooms (sliced). Put in casserole dish. Brown beef and add. Pour both tomatoes in skillet and add zucchini. Cook until tender. Add all to casserole and mix. Sprinkle with Parmesan and bake at 350F--Serve as is or with noodles.
