SOPAS

This new section is devoted to sopas, or soups with a Mexican influence. I'm listing them as individual recipes. All of them except the first are recipes we've developed through testing and tasting, and are our favorite versions of classic sopas. The first recipe, however, Caldo Xochitl, comes from El Mirador Restaurant - San Antonians know that if it's Saturday, the Trevino family will be making their famous soup there. The restaurant is a local favorite and has received national press in the New York Times and Bon Appetit.
