Easy Dried Tomato and Beer Bread

If you are noticing the common theme of "easy" in most of these, you're right. I really like finding recipes that are good but can be pulled together when I haven't much time.

2 oz. sun-dried tomatoes

1/4 cup sugar

3 1/2 cups self-rising flour

1 can beer at room temperature

1/4 cup tomato sauce

1 egg

One and a half hours before beginning bread, place tomatoes in large pan with water to cover and simmer gently for 10 minutes. Remove from heat and let stand 1 hour to plump up and soften. Drain softened tomatoes and chop (save juice to add to soups, etc.) Mix sugar with flour. Add beer, egg, and tomato sauce and mix together quickly. Fold in tomatoes. Spoon batter into greased loaf pan and bake until done, 50-60 minutes. This bread is good with soup or salad and can be toasted with butter.
