My friend Victoria is a very good cook - she has a talent for combining flavors that work well together. I am including her recipe exactly as she gave it to me. My only comments would be to add the lime juice in one-to-four parts to the oil, and to use the peanut butter somewhat sparingly - otherwise, as she says, "round up in the usual proportions and assemble in the usual manner."
Ingredients for Dressing:
Vegetable Oil
Sesame Oil (Dark)
Lime Juice
Ginger, powdered
Soy Sauce
Balsamic Vinegar
Peanut Butter
Jalapeño Mustard
Garlic, powdered
(Round up the usual proportions)
Salad:
Grilled sliced chicken breasts (marinated in a mixture of sesame oil, soy sauce, and ground pepper)
Snow peas
Green onions
Peanuts
Mandarin oranges*
Yellow or red bell peppers
Leaf lettuce or other greens as desired
*add juice to dressing if needed
(Assemble in the usual manner--serve while chicken is warm)
