Water Street Oyster Bar is just down the street from our house and we go there often. This dressing is smooth and mellow. They serve it over a house salad of mixed greens garnished with croutons and alfalfa sprouts.

WALNUT SALAD DRESSING

2 green onions

6 springs fresh parsley

1/4 cup finely chopped walnuts

1-1/2 cups plus 2 tablespoons mayonnaise

6 tablespoons buttermilk

1-1/2 teaspoons fresh minced garlic

1 teaspoon salt

1/2 teaspoon white pepper

2 teaspoons paprika

1/2 teaspoon dried tarragon leaves

4 teaspoons sugar

1-1/2 tablespoons tarragon vinegar

 

Wash green onions and parsley and shake dry, then pat dry with paper towels. Chop 1/2 inch off ends of green onions and discard ends. Whittle leaves off parsley. Chop onions and parsley fine by hand. then combine with remaining ingredients and mix well. Refrigerate in tightly covered container.

Makes 2 cups.
